Instructions

  1. Prepare the Cake Layers:
    Preheat oven to 350°F. Grease and flour three 9-inch round cake pans, lining each with parchment paper.
  2. Melt White Chocolate:
    Gently melt white chocolate in 20-second increments in the microwave, stirring each time until smooth.
  3. Mix Dry Ingredients:
    Combine flour, baking powder, baking soda, and salt in a bowl. Set aside.
  4. Cream Butter and Sugar:
    Beat butter and sugar until light and fluffy. Add egg yolks one at a time, then vanilla and melted white chocolate, mixing well.
  5. Combine Wet and Dry Ingredients:
    Alternately add the flour mixture and buttermilk to the butter mixture, beginning and ending with flour. Mix until just combined.
  6. Fold in Egg Whites:
    Beat egg whites to soft peaks and gently fold into the batter. Pour batter evenly into prepared pans.
  7. Bake Layers:
    Bake for 20-25 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes, then transfer to wire racks.
  8. Make the Frosting:
    In a saucepan, combine butter, sugars, egg yolks, and evaporated milk. Cook over medium heat, stirring constantly until thickened (about 10 minutes). Remove from heat and stir in vanilla, coconut, and pecans. Cool until spreadable.
  9. Assemble the Cake:
    Place one layer on a serving plate, spread frosting on top, and repeat with remaining layers. Frost top and sides, garnish if desired, and serve!
